Power Cookies
1/2 c peanut butter/ almond butter
1/2 c honey
1 c brown sugar* I use about 1/2c to 3/4c
1/2 c vegetable oil* - I use either apple sauce or plain yogurt
2 eggs
1/2 tsp vanilla
1 c whole wheat flour


1 tsp baking soda
1 tsp salt
3 cups rolled oats
1 c coconut* I use about 1/2 - 3/4 cup
1/2 c bran* I use up to 1 cup based on the amount of other dry ingredients I use, ie: if I don't have wheat germ or oat bran, I add more bran
1/4 c wheat germ
1/2 c oat bran
1 cup raisins* I use chocolate chips/butterscoth chips as well
1/2 c chopped peanuts

Other ingredients I add:
about 1/4 c each sesame seeds, sunflower seeds, flax seeds, walnuts, almonds

Preheat oven to 375F
Cream peanut butter and honey. Beat in sugar, oil (or substitute), eggs and vanilla. Stir in flour, baking soda and salt. Add remaining ingredients and stir well.
Use a 1 tsp spoon/ scooper to place the cookies on a lightly greased baking sheet. Bake for 10 mins or until browned on the bottom.
