Note this is a lot less sweet than store-bought granola...
This granola is hearty and a little goes a long way. It’s great to sprinkle over yogurt or mix a bit into your regular cereal.
700g old fashioned rolled oats (or can mix in other flakes such as spelt, kamut, barley etc)
120g sunflower seeds
120g white sesame seeds
250g applesauce
3 tsp ground cinnamon
1.5 tsp ground ginger
3-4 Tbsp honey
70g light brown sugar
250g whole natural almonds
1 tsp salt
2 Tbsp sunflower or canola oil
300g raisins
Mix everything together except the raisins. Spread thinly onto 2 large baking sheets and bake in a 325F oven for 40 min – 1 hour, stirring every 20 min or so. It’s done when it’s lightly browned all over. After it cools, add the raisins.
Lots of great variations can be made by changing the nuts and fruit. Here are a few of my favourites:
Banana Coconut Cashew (so good!)
Use mashed banana instead of the applesauce, shredded coconut instead of sesame seeds and cashews instead of almonds.
Pumpkin Maple
Use canned pureed pumpkin instead of the applesauce, maple syrup instead of honey, pumpkin seeds and craisins instead of sunflower seeds and raisins.
